A friend of mine, Tammy, has a daughter who is off gluten completely. You can comment on her blog at townsendtammy.blogspot.com – I’m sure she’d offer you any advice she has.
I don’t have a ton of info, but it is so strange that you ask this now. Our pedi- wants Georgia to get checked (it’s common in kids with DS) and my sister is actually getting tested tomorrow because she’s been having problems that seem associated with that kind of thing. I hope all is ok, but if it’s any solace I have been doing a LITTLE research lately and there are a lot of alternative foods out there these days. celiac.com might be a good place to check out.

I have something called “angioedema” and I have been told eating a “gluten free” diet will help it. I haven’t tried it yet but I’ve been thinking about it.

Run a google search for “Raising our Celiac Kids” and you’ll get several hits for support groups. You will find tons of information there.
A friend of mine was diagnosed with that in her 20’s. She started writing about it here as it was happening http://ky-expatriate.livejournal.com/21304.html If you keep going, there are some other entries talking about weird stuff that has gluten, like Sudafed or chicken broth. She’s getting married next year and isn’t having a cake because she doesn’t want to bother finding a gluten-free bakery.
While it would suck if Eli has celiac, it seems like it might be a relief to know why he never sleeps and is such a picky eater.
I actually have been dealing with it for almost 5 years but was misdiagnosed as IBS until this year. Eating gluten free is actually pretty straightforward and easy once you know what you’re doing, it’s healthier too. Feel free to e-mail me.

I don’t have a lot of knowledge to offer – only that I’ve read it’s becoming more common, and as someone else pointed out there are more “gluten free” things on the market these days. Oh yeah, and a girl I went to highschool with who has it just competed in the Beijing Olympics. So, apparently it didn’t hold her back physically!
My husband has celiac – diagnosed 4 years ago. Feel free to email me with any questions. It took almost 3 years to get the diagnosis. Our home is mostly gluten-free because of him, and all of our meals are. http://killthegluten.blogspot.com has good recipes, and I have tons of my own. it was intimidating at first, but now I can modify jsut about any recipe to be gluten free.
